Mini Dinner Rolls


I had wanted to post this 2 weeks ago. However, I had totally forgotten about it until I stumbled onto the picture of those lovely rolls while I was browsing through my picture album just now.

These are one of the best dinner rolls that I have ever tasted and MADE!!!! I made them during the last "New Year's Eve" party. They were so yummy that my nephews and niece (including my kids too) kept asking for more. I had baked them twice this month and shared them with all those kids.

I cannot remember where I found this recipe (so sorry for not being able to give credit to the recipe owner). Anyway... I must say that it is a very easy and flavorful recipe. Definitely a keeper.

Mini Dinner Rolls

Ingredients :
4 1/2 cup ( 600gm) high protein flour (bread flour) ... you can add up to another 100gm more if necessary
100 gm butter
1 cup milk
80 gm sugar
3 eggs (beaten)
1 tsp salt
2 tbsp dry active yeast
1/2 cup warm water

Method
  • Dissolve the yeast into 1/2 cup of warm water. Set aside to allow the yeast to activate.
  • haet butter and milk until butter is melted. Allow to cool.
  • Combine sugar, salt, eggs and yeast with the milk mixture.
  • In a stand mixer, combine flour and the milk mixture.
  • Mix until a smooth dough is formed (the mixture should begin to pull away from the sides of the bowl). If the mixture is too sticky, slowly add up to 100 gm of flour while the mixer is still kneading. The dough should be slightly sticky, but workable. (**** Note : A soft dough makes a light roll!!!*****)
  • Cover the mixer bowl with cling wrap and allow it to rise until double (approximately 1 hour)
  • Punch the dough down and divide into 2 equal portions. Shape them into balls
  • Roll out the first ball onto a floured surface into a 16 " disc.
  • Spread some soft butter all over the dough disk with the back of a spoon.
  • Cut the disc into 16 early portions (like a pizza)
  • Each piece of dough resembles a long triangle now. Roll the dough put from the base to the tip.
  • Place each rolls onto a cookie sheet lined with parchment paper. Make sure the end /tip of the roll is tucked under the bottom of the roll (otherwise it will pop up and burn).
  • Do the same to the second ball of dough.
  • This will yield 32 rolls.
  • Proof them for about an hour.
  • Bake in a preheated oven of 400F or 200C for 10 minute.
  • Brush the top of the hot rolls with butter.
  • Serve

Cornflakes coated Black Sesame Tuna Buns






The title of this post is a mouthful. I was supposed to just bake some black sesame buns with tuna fillings yesterday. However, while rummaging through my larder I have found that I have a box of cornflakes hiding in there. While thinking of what I should do with it, I wondered if I could incorporate it into my buns (that I was preparing). So....I decided to try crushing some cornflakes and coat them onto the buns. It should be well received as both the cornflakes and buns are my children's favorite.

The aroma from the freshly baked buns was heavenly. The cornflakes gave the buns a crispy and crunchy outer layer while the tuna fillings provide a soft and moist interior. The buns were real soft. On the whole, I must say that it was a success... if I have not stopped the kids, we would have no buns for breakfast this morning! However, there is a downside .... the cornflakes will soften when the buns are kept for more than a few hours. So... to counter this issue, I just toast them in the oven for a few minutes and... viola!!!! crunchy buns again. Kids are happy ;0

Here is the recipe

Ingredients

500gm High Protein Flour (Bread Flour)
60 gm Low Protein Flour (Cake Flour)
10 gm instant yeast
40gm black sesame powder
30 gm Horlicks
60gm sugar
9gm salt
1 egg
250ml fresh milk
150ml whipping cream

Toppings:
some cornflakes (coarsely crushed)

Fillings :
1 tin of tuna flakes (drained away the water or oil)
1 big onion (chopped)
2-3tbsp mayonnaise
juice from 1/2 a lemon
pinch of salt
pepper to taste
** mix all the ingredients together****

Method :
  • Mix all ingredients in a mixer.
  • Knead till gluten is fully developed and dough is elastic, smooth, non sticky and does not stick to the sides of the mixing bowl.
  • Cover with a damp towel and allow the dough to prove till double in size (about 60 minutes)
  • Punch out the dough and divide it into balls of 50gm each.
  • Shape them into balls and let it rest for about 15 minutes.
  • Flatten each dough and roll into a circle.
  • Wrap a tbsp of the filling onto the dough and shape it into an oblong shape.
  • Egg wash the buns to coat them with the crushed cornflakes.
  • Place all dough in a baking tray (lined with parchment paper).
  • Prove for about 45minutes or till dough double in size.
  • Bake in a preheated oven of

  • Remove buns immediately from tin onto a cooling rack. Serve.

First thousand hits!!!!

I am elated!!!!!

Both my blogs surpassed the 1st thousand mark on the same week;) Early this week my other blog, Bagncraft.blogspot.com hit 1000 visitors. Now this blog has follow suit. Despite the fact that both the blogs were started at the same time, I have never imagined that they will both hit 1000 visitors from a total of 55 countries within 4 months. I am aware that 1000th mark is not much to shout about (many blogs hits 100,000 in less than 4 months!). However, to me this is a great achievement.

So, to all my readers.... I thank you from the bottom of my heart! I am looking forward to the next milestone...10,000 hits!!!!!

Hopefully...this can be achieved before the end of 2010 ;p

Onion Rosemary Cheese Bread

The schools in Malaysia started a week ago. That means it's back to baking as we normally have bread for breakfast in the mornings.

I baked a savory bread recently. Noticed that lately my children seem to prefer savories to sweets in the mornings.

We love big onions in our food so when I baked an onion rosemary cheese bread it was snapped up during breakfast. This is a really fragrant bread as herbs are used. The aroma of this freshly baked bread is heavenly.




Onion Rosemary Cheese Bread

Ingredients
400gm High Protein Flour
30gm sugar
8 gm salt
2 tsp instant yeast
250ml water/ milk
25gm shortening
150gm fried onion rings
5gm dried rosemary

Toppings :
Some Onion Rings
Some Dried Rosemary
Some Dried Parsley
Some cheddar cheese

Method:
  • Mix flour, sugar, salt and yeast till well blended.
  • Add in water and knead to form a dough.
  • Add in shortening and continue kneading till a smooth dough is formed.
  • Mix in fried onion rings and dried rosemary to the dough till well blended.
  • Prove for about 45 minutes or till the dough double in size.
  • Divide the dough into 2 portions, shape them into balls and leave them to rest for 10 minutes.
  • Roll them out into 30cm long shape and put them into a greased baking tray.
  • Leave the dough to prove for another 45 minutes.
  • Brush the top with egg wash.
  • Arrange some onion rings on top of the bread and sprinkle with dried rosemary and parsley.
  • Top with some cheddar cheese.
  • Bake on the low shelf of a preheated oven of 190C for 25-30 minutes or till golden brown.
  • Serve.

Breathless

We are into the 10th day for the year 2010. Wow....... that's real fast. The past 10 days has been pretty crazy for me. School started a week ago and with the beginning of a new school year, there are new schedule to follow.

Year 2010 is going to be a very busy year for me and my children. Both my second and third child will be sitting for Public examination at the end of the year. My youngest will be completing her Primary school education and she will be required to sit for a public examination in September. My second child who will be graduating from High School will be sitting for a very big public examination (equivalent to the O-levels examination) in November. This examination will determine if he could pursue his ambition and enter the college or university of his choice. With these two major events coming up, my children are loaded with extra classes and tuitions after school on weekdays. So poor Mommy here is busy ferrying them around.

On another note, my eldest child is starting work tomorrow!!!! I am still in a daze.... 19 years ago, on this day.. he was just a bundle of joy that I was carrying with me in my tummy. Now he is a young adult. He completed High School and took up the Australian matriculation here in Malaysia last year. He did well and was amongst the top 10% in Tertiary Entrance Ranking (for Australia). However, he has opted to take a 6 months break to experience the working world before furthering his studies in the University.

I am still trying to get used to all these changes. I hardly have any free time now as I am always rushing around. Hopefully things will be more settled by end of this month and I can get back to blogging more frequently.

Goodbye 2009, Hello 2010

H A P P Y N E W Y E A R!!!!!!

How time flies!!!!
It's already the 3rd day into the new year. I had wanted to write this post on New Year's Day.....but.... I have been so pre-occupied with my other commitments that I have totally forgotten about updating my blog. The last 2 weeks has been hectic with all the festivities. To top that, school will be starting tomorrow. So... had to tend to my two younger ones schooling needs to get them ready for school.

Enough of the whining and excuses.... Let's me tell you how I spent my New Year's Eve.

My family had a New Year's Eve get-to-gather in my place this year. Normally, we would all gather in my parents' place for a steamboat party. However, the kids suggested that we should have a barbecue party. Since I have a garden over at my place, it was unanimous that it will be held in my house. The kids (my children, my niece and nephews) said the they will do the "barbecueing". So the deal was " adults prepare food, children cook them while adults can kick back and relax during the party". Sounds like a great deal, right???? Now... this is the real situation.... kids did chip in to start the fire and were seen at the bbq pit during the first 30 minutes or so. After that they slowly but surely left the pit with their food and never return to the pit. So... the adults are forced to tend to the pit and continue the bbqing. Once again... we adults are conned by the children ;(.

Anyway, the party was a great success. I had my mum-in-law joining us this year. My mum and my mum-in-law are buddies, so they had a great time. My father did not join us on that night as he was not feeling well. We cooked some food and brought it to him instead (my parents' house is within my neighborhood). My sisters and brothers came with their family. We also had the honor of my sister-in-law's (my next door neighbor) sister and her hubby from Australia joining us.

We had bbq and steamboat. My sis-in-law and I prepared the food for the bbq while my sister prepared the food for the steamboat. I also baked some dinner rolls and made coconut agar agar.
So. there were plenty of food to eat.

Apart from eating, we had a great time chatting with each other. Quality time spent with family....priceless!!! The children stayed back and had a slumber party. Bet they had a good time too! They stayed up till 4am!!!! It's crazy, but this is once in a blue moon... so we adults just have to "close one eye" ;P

I did not managed to snap any photos as I totally forgot about it. Too bad. I think my sis-in-law did managed to get some shots. Will try to post some photos, if I managed to get it from her.

Now that all these festivities are over and schools back tomorrow, life will be normalize soon.
